SUMMER SALAD

This salad is not only quick and delicious, it’s packed with water, fiber and antioxidants.

Cucumbers, lettuce and tomatoes boast between 93-96% water content. Cucumber

and Romaine lettuce are good sources of fiber and Vitamin A. Tomatoes contain

lycopene (studies have linked it with protection against oxidative damage). This is the

perfect Summer Salad - it leaves you feeling fresh and light!


INGREDIENTS

3 cups of chopped Romaine hearts

1 cup of sliced baby cucumbers

1 cup of cubed Big Beef tomato

1 cup of cubed yellow heirloom tomato

¾ cup of crumbled feta cheese

1 tablespoon of fresh dill

1 pinch of salt and 1 dash of pepper


PREPARATION

 Add all ingredients to bowl and toss with 1/3 cup of extra virgin olive oil and 1/8

cup of red wine vinegar!
