Veggie Broth

VEGGIE BROTH

This recipe makes a mild veggie broth that can be used as a base for other recipes, or for sipping on a cold day! BROTHS act as a nutrient- dense base for all kinds of cooking.



Ingredients

· 8 cups water

· 1 ear corn

· ½ cup scallions (green part only)

· ½ cup leeks (green part only)

· 2 carrots chopped

· 2 parsnips chopped

· 1 medium celery stalk

· 1 bay leaf

· ½ teaspoon salt

· ½ teaspoon freshly ground black pepper

· 1 tablespoon garlic-infused oil


Directions

· Add garlic infused oil to large pot and sauté the scallions and leek greens over medium heat (2-3 mins)

· Add water and remaining ingredients – cook over medium – high heat

· Once water is boiling, cover the pot and lower the heat to a low simmer. Cook for 1 ½ - 2 ½ hours (until flavorful)

· When finished, remove the vegetables. Pour the broth into a container to store if you are not using right away
